A Chilean chef at a classic Hua Hin hang is turning up the heat.
If you’re searching for real South American food, try looking a bit further. Driving to Hua Hin this weekend, you may find some surprising flavors at the new Nomada.
The newly-opened restaurant is part of a revamped project from the Dusit Thani chain, as its vice president Siradej “Champ” Donavanik attempts to rebrand this classic spot to cater to the tastes of younger travelers.
Set inside Dusit Thani Hua Hin, Nomada ticks all the boxes for a good-vibe beachside restaurant: sweeping sea views and breezy al-fresco dining, perfect for long lazy lunches and dining.
Foodwise, the dishes here are overseen by Chilean chef Andre Josef Nweh Severino, who works with local farmers and fishers in Hua Hin to bring seasonal produce to his South American dishes. The chef also shows off his skills mastering a live-fire barbeque grill.
Start off with calamares fritos, golden deep-fried battered squid served alongside house-made tartar sauce, or the baked cheese scallops with quinoa topped with fiery Peruvian yellow chili sauce. Looking for something to refreshing? Order his ceviche, featuring fresh catch of the day with a fresh sweet tang of Thai mangoes.
The hlightlight, however, is his craft of live fire cooking, which sees 120-day grain fed slow-cooked picanha sizzling to perfection.
